  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 large tortillas
  • 1 cup fresh salsa

Instructions

  1. In a large bowl, combine cooked rice, black beans, corn, cumin, and chili powder.
  2. Lay out each tortilla and place a portion of the mixture in the center.
  3. Add sliced avocado and a spoonful of salsa on top.
  4. Fold the sides of the tortilla over the filling and roll it tightly.
  5. Slice in half and serve with additional salsa if desired.
