A quick and comforting coconut curry noodle soup that can be prepared in just 15 minutes, perfect for busy weeknights.

  • 1 tablespoon red curry paste
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 4 ounces rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup spinach
  • 2 teaspoons soy sauce
  • 1 teaspoon lime juice
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a pot, heat coconut oil over medium heat.
  2. Add red curry paste and sauté for 1 minute.
  3. Stir in coconut milk and vegetable broth, bring to a simmer.
  4. Add rice noodles and cook according to package instructions.
  5. In the last 2 minutes of cooking, add bell peppers and spinach.
  6. Stir in soy sauce and lime juice.
