Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups water
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until translucent.
  3. Stir in the chicken pieces, cooking until lightly browned.
  4. Add the water, carrots, potatoes, cumin, salt, and pepper; bring to a boil.
  5. Reduce heat and simmer for 45 minutes, or until chicken is cooked through.
  6. Remove chicken, shred the meat, and return to the pot.
  7. Stir in the fresh parsley before serving.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
