  • 4 pounds pork shoulder
  • 2 cups apple cider
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons maple syrup
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons apple cider vinegar

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large oven-safe pot, heat olive oil over medium heat. Brown the pork on all sides.
  3. Add chopped onion and garlic, sauté until fragrant.
  4. Pour in apple cider, maple syrup, thyme, salt, and pepper. Bring to a simmer.
  5. Cover pot and transfer to the oven. Cook for 3-4 hours, until the pork is tender.
  6. Remove from oven, stir in apple cider vinegar, and let rest before serving.
