  • 2 tablespoons curry powder
  • 1 tablespoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup coconut milk
  • 2 green onions, sliced
  • 1 scotch bonnet pepper, whole

Instructions

  1. In a large bowl, combine chicken pieces with curry powder, allspice, salt, and pepper. Let marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add marinated chicken to the skillet, cooking until browned on all sides.
  4. Stir in bell pepper, coconut milk, and green onions. Add the whole scotch bonnet pepper for extra heat.
  5. Cover and simmer on low for 30-40 minutes until chicken is cooked through and tender.
  6. Remove scotch bonnet pepper before serving.
