- 2 tablespoons Jamaican curry powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, chopped
- 2 cups coconut milk
- 2 cups water
- 2 sprigs thyme
