  • 2 pounds chicken, cut into pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, chopped
  • 2 cups coconut milk
  • 2 cups water
  • 2 sprigs thyme

Instructions

  1. In a large bowl, mix the chicken with curry powder, salt, and black pepper until well coated.
  2. Heat vegetable oil in a large pot over medium heat, then add the onions, garlic, and ginger. Sauté until fragrant.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Add the peppers, coconut milk, water, and thyme. Stir well.
  5. Bring to a boil, then reduce heat to simmer for 30-40 minutes until chicken is tender.
