A delicious baked blueberry donut recipe that is easy to make and perfect for breakfast or a sweet treat.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Fill each donut cavity about 2/3 full with batter.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Allow to cool before removing from the pan.

Notes

  • For extra flavor, add a teaspoon of lemon zest to the batter.
  • These donuts are best enjoyed fresh but can be stored for a couple of days.
