Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1 cup almond milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 4 slices turkey bacon
  • 1 cup mixed fresh fruit (berries, bananas, etc.)

Instructions

  1. In a bowl, mash the bananas until smooth.
  2. Add the oats, almond milk, baking powder, cinnamon, and salt. Mix until well combined.
  3. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake into the skillet.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. In another pan, cook the turkey bacon until crispy.
  6. Serve pancakes with bacon and fresh fruit.

Notes

  • For a sweeter pancake, add a tablespoon of maple syrup to the batter.
  • You can also substitute almond milk with any milk of your choice.
