- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and diced
- 6 to 8 apples, peeled, cored, and sliced
- 3/4 cup sugar
- 2 teaspoons cinnamon
- 1 tablespoon lemon juice
- 1 egg yolk
- Preheat the oven to 425°F (220°C).
- In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Roll out half of the dough and place it in a pie dish.
- In another bowl, toss apples with sugar, cinnamon, and lemon juice. Fill the pie crust with the apple mixture.
- Roll out the second half of the dough, place over the filling, and cut slits for steam to escape.
- Brush the top with egg yolk.
- Bake for 15 minutes in the preheated oven. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes.
