  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 dried guajillo peppers
  • 2 dried ancho peppers
  • 4 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat oil over medium heat. Season the beef with salt and pepper, then brown on all sides.
  2. Add the onions and garlic, sauté until fragrant.
  3. Add the dried peppers, beef broth, cumin, oregano, and bay leaf.
  4. Simmer for 2 hours until the beef is tender.
  5. Shred the beef and serve in tortillas with cilantro and lime.
