Enjoy a delicious and easy breakfast with this Smashed Avocado Tomato Toast topped with a perfectly Fried Poached Egg.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 medium tomato
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Toast the whole grain bread slices until golden brown.
  2. In a bowl, mash the ripe avocado and season with salt and pepper.
  3. Spread the smashed avocado over the toasted bread.
  4. Slice the tomato and layer it on top of the avocado.
  5. In a pan, heat the olive oil and carefully crack in the eggs. Cook until the whites are set but the yolks are still runny.
  6. Place the fried poached eggs on top of the tomato slices.
  7. Serve immediately and enjoy!

Notes

  • For a variation, add red pepper flakes for some heat.
  • Use different types of bread as per your preference.
