- 2 slices whole grain bread
- 1 ripe avocado
- 1 medium tomato
- 2 eggs
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- Toast the whole grain bread slices until golden brown.
- In a bowl, mash the ripe avocado and season with salt and pepper.
- Spread the smashed avocado over the toasted bread.
- Slice the tomato and layer it on top of the avocado.
- In a pan, heat the olive oil and carefully crack in the eggs. Cook until the whites are set but the yolks are still runny.
- Place the fried poached eggs on top of the tomato slices.
- Serve immediately and enjoy!
