A delicious and nutritious breakfast featuring smashed avocado on toasted bread, topped with fresh tomatoes and a perfectly fried poached egg.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 medium tomato
  • 1 egg
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, heat olive oil in a pan over medium heat.
  3. Crack the egg into the pan and fry to your desired doneness.
  4. In a bowl, mash the ripe avocado with salt and pepper.
  5. Spread the mashed avocado evenly on the toasted bread.
  6. Slice the tomato and place on top of the avocado.
  7. Top with the fried poached egg.
