  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
  2. Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer until the broccoli is tender.
