  • 1/4 cup all-purpose flour

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and garlic and sauté until translucent.
  2. Stir in flour and cook for 1 minute.
  3. Gradually add vegetable broth, stirring constantly to avoid lumps.
  4. Add broccoli and cook until tender, about 15 minutes.
  5. Stir in milk and cheese until melted and smooth.
  6. Season with salt and pepper, and serve hot.

  • For a creamier soup, blend half of the soup and mix it back in.
