4 cups diced potatoes
1 cup turkey bacon, chopped
1 cup chicken ham, diced
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 teaspoons Cajun seasoning
salt to taste
pepper to taste
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
In the same pot, add the onions and garlic, and sauté until translucent.
Add the diced potatoes and chicken ham to the pot, stirring to combine.
Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
Stir in the heavy cream and Cajun seasoning, cooking for an additional 5 minutes.
Season with salt and pepper to taste.
Serve hot, topped with crispy turkey bacon.
Notes
For a thicker soup, use an immersion blender to blend some of the potatoes.
Adjust the level of Cajun seasoning according to your spice tolerance.
