  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the butter with the brown and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Fold in the diced apples and half of the caramel sauce.
  7. Divide the batter among the muffin cups and bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Remove from the oven and let cool. Drizzle the remaining caramel sauce on top before serving.
