Delight in these caramelized sweet potatoes topped with maple syrup, feta cheese, and crunchy walnuts.

Ingredients

  • 4 medium sweet potatoes
  • 1/4 cup maple syrup
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, and cinnamon.
  4. Spread the potatoes on a baking sheet and bake for 25-30 minutes until tender.
  5. Drizzle with maple syrup and sprinkle with feta cheese and walnuts.
  6. Return to the oven for an additional 10 minutes until the feta is slightly golden.
  7. Serve warm.

Notes

  • Adjust the sweetness of the dish by adding more or less maple syrup.
  • For a crunchier texture, toast the walnuts before adding.
