  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves

  2. In a large bowl, cream together the sugar and butter until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the milk.
  4. In another bowl, combine the flour, baking powder, cinnamon, ginger, cardamom, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

  • This cake pairs wonderfully with cream cheese frosting or a light glaze.
  • For an extra touch, sprinkle some chopped nuts on top before serving.
