A creamy and delicious soup that combines the flavors of cheddar cheese, broccoli, and potatoes.

Ingredients

  • 4 cups broccoli florets
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Add in the broccoli florets and cook until they are bright green and tender.
  4. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend part of it and leave some vegetables whole.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  6. Season with salt and black pepper to taste. Serve hot.

Notes

  • For a healthier option, you can substitute half-and-half for the heavy cream.
  • This soup is great for freezing; just leave out the cream until you reheat it.
