2 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
1 cup sliced mushrooms
½ cup Madeira wine
1 cup chicken broth
2 tablespoons butter
¼ cup chopped fresh parsley
Instructions
Season the chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides.
Remove the chicken from the skillet and set aside.
Add mushrooms to the skillet and sauté until tender.
Pour in the Madeira wine and chicken broth, scraping the bottom of the skillet to release any browned bits.
Return the chicken to the skillet and simmer until cooked through.
Finish with butter and sprinkle with parsley before serving.
