  • 3 cups cooked shredded chicken
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 1 cup black beans, rinsed and drained
  • 2 cups corn tortillas, cut into strips
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the chicken, black beans, half of the cheese, enchilada sauce, chili powder, cumin, garlic powder, onion powder, and salt.
  3. Layer a portion of the tortilla strips in a baking dish.
  4. Spread half of the chicken mixture over the tortillas.
  5. Add another layer of tortilla strips and the remaining chicken mixture.
  6. Top with the remaining tortilla strips and cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown.

Notes

  • For extra flavor, top with fresh cilantro before serving.
  • Serve with sour cream and avocado for a delicious addition.
