- 3 cups cooked shredded chicken
- 2 cups enchilada sauce
- 1 cup shredded cheese
- 1 cup black beans, rinsed and drained
- 2 cups corn tortillas, cut into strips
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the chicken, black beans, half of the cheese, enchilada sauce, chili powder, cumin, garlic powder, onion powder, and salt.
- Layer a portion of the tortilla strips in a baking dish.
- Spread half of the chicken mixture over the tortillas.
- Add another layer of tortilla strips and the remaining chicken mixture.
- Top with the remaining tortilla strips and cheese.
- Bake for 25-30 minutes until bubbly and golden brown.
