  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 3 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pot, boil the diced potatoes until tender, about 10 minutes. Drain and set aside.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Add the chopped spinach, cooked potatoes, and shredded cheese to the egg mixture and combine well.
  5. Pour the mixture into the pie crust and spread evenly.
  6. Bake for 30-35 minutes, or until the quiche is set and golden on top.
  7. Allow to cool for a few minutes before slicing and serving.
