2 medium zucchinis
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup almond flour
2 eggs
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
In a large bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, almond flour, eggs, garlic powder, salt, black pepper, and Italian seasoning.
Mix until well combined.
Spread the mixture onto the prepared baking sheet in a rectangular shape, about 1/2 inch thick.
Bake for 25-30 minutes, or until golden brown.
Remove from the oven and let cool slightly before cutting into sticks.
