A warm and hearty chicken and dumpling soup perfect for cozy evenings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 2 cups biscuit mix
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken, carrots, celery, onion, and chicken broth. Bring to a boil over medium heat.
  2. In a separate bowl, mix biscuit mix with milk and thyme to form a dough.
  3. Drop spoonfuls of the dough into the boiling soup.
  4. Cover and simmer for 15-20 minutes until dumplings are cooked through.
  5. Season with salt and pepper before serving.
