- 1 pound chicken breasts
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained
- 1 cup corn
- 1 cup bell peppers, chopped
- 1 lime, juiced
- 1 cup tortilla strips
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in the diced tomatoes, chili powder, and cumin.
- Add chicken broth, black beans, corn, and bell peppers; bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Add chicken breasts and cook until fully cooked, about 10 minutes.
- Remove chicken, shred it, and return to the pot.
- Stir in lime juice and tortilla strips before serving.
