Ingredients

  • 1 pound chicken breasts
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained
  • 1 cup corn
  • 1 cup bell peppers, chopped
  • 1 lime, juiced
  • 1 cup tortilla strips

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the diced tomatoes, chili powder, and cumin.
  4. Add chicken broth, black beans, corn, and bell peppers; bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Add chicken breasts and cook until fully cooked, about 10 minutes.
  7. Remove chicken, shred it, and return to the pot.
  8. Stir in lime juice and tortilla strips before serving.

Notes

  • For extra flavor, add diced avocado or cheese as a topping.
  • This soup can be easily made in a slow cooker.
