These Chocolate Caramel Oatmeal Cookie Bars are a delicious homemade treat that combines rich chocolate and gooey caramel with a chewy oatmeal base.

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups quick oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add in the eggs and vanilla, mixing well to combine.
  4. Stir in the oats, flour, baking soda, and salt until fully incorporated.
  5. Spread half of the mixture in the bottom of the prepared baking dish.
  6. Drizzle caramel sauce over the layer of dough, then sprinkle with chocolate chips.
  7. Spread the remaining dough on top, gently pressing it down.
  8. Bake for 25-30 minutes, or until golden brown.
  9. Allow to cool before cutting into bars.

Notes

  • For a richer flavor, use dark chocolate chips.
  • These bars are best served warm with a scoop of vanilla ice cream.
