Ingredients
Scale
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 large eggs
½ cup vegetable oil
1 teaspoon vanilla extract
1 ½ cups grated zucchini
½ cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
In another bowl, whisk the eggs, oil, and vanilla extract together.
Combine the wet ingredients with the dry ingredients and stir until just combined.
Fold in the grated zucchini and chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely.
Notes
For an extra chocolatey flavor, add additional chocolate chips on top before baking.
Ensure the zucchini is well drained to avoid excess moisture in the bread.
