  • 1 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/3 cup butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 cup additional sugar for topping

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a baking pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter to form the crust.
  3. Press the mixture into the bottom of the greased pan and set aside.
  4. In a mixing bowl, beat the cream cheese until smooth, then add sour cream, vanilla, and eggs, mixing well.
  5. Pour the cream cheese mixture over the crust and spread evenly.
  6. Bake for 40-45 minutes until set and slightly golden.
  7. Mix the remaining sugar and cinnamon together, and sprinkle over the top of the bars after baking.
  8. Allow to cool and then chill in the refrigerator before cutting into bars.

Notes

  • For best results, let the cheesecake bars chill overnight before serving.
  • These bars can be topped with whipped cream for extra indulgence.
