- 3/4 cup granulated sugar
- 2 cups mascarpone cheese
- 1 1/2 cups heavy cream
- 1 cup brewed espresso, cooled
- 1/2 cup coffee liqueur (optional)
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder
- In a large bowl, whisk together the egg yolks and sugar until pale and creamy.
- Gently fold in the mascarpone cheese until combined.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
- In a shallow dish, combine the espresso and coffee liqueur. Quickly dip each ladyfinger into the mixture.
- Layer half of the dipped ladyfingers in a 9×13 inch dish, then spread half of the mascarpone mixture over them.
- Repeat the layers with the remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder.
