1 cup strong brewed coffee
3 large eggs
3/4 cup granulated sugar
2 cups mascarpone cheese
1 teaspoon vanilla extract
24 ladyfingers
2 tablespoons cocoa powder
Instructions
In a mixing bowl, beat the eggs and sugar until pale and fluffy.
Add mascarpone cheese and vanilla extract, mixing until smooth.
Dip ladyfingers in coffee quickly and layer them at the bottom of a dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat the layers with the remaining ladyfingers and mascarpone mixture.
Chill in the refrigerator for at least 4 hours.
Before serving, dust with cocoa powder.
Notes
For a stronger coffee flavor, use espresso instead of brewed coffee.
