- 1 cup wild rice
- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 cup onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon sage
- 2 cups kale, chopped
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the bacon drippings, sauté onion, garlic, carrots, and celery until soft.
- Add the wild rice, broth, thyme, and sage. Bring to a boil.
- Reduce heat and simmer until rice is tender.
- Stir in kale and cooked bacon. Simmer until kale is wilted.
- Season with salt and pepper before serving.
