A warm and hearty soup perfect for chilly autumn days, featuring wild rice and turkey bacon.

Ingredients

  • 1 cup wild rice
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 2 cups kale, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the bacon drippings, sauté onion, garlic, carrots, and celery until soft.
  3. Add the wild rice, broth, thyme, and sage. Bring to a boil.
  4. Reduce heat and simmer until rice is tender.
  5. Stir in kale and cooked bacon. Simmer until kale is wilted.
  6. Season with salt and pepper before serving.
