Delicious and easy-to-make cranberry orange muffins topped with a sweet streusel.

Ingredients

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup fresh cranberries
  • 1/2 cup streusel topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, oil, eggs, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cranberries.
  6. Fill muffin cups about 3/4 full and sprinkle with streusel topping.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Try adding nuts for extra crunch.
  • For a sweeter muffin, increase sugar to 1 1/4 cups.
