  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add the turkey bacon. Cook until crispy.
  2. Add the onions, garlic, and mushrooms. Sauté until softened.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the thyme, salt, and pepper, then allow to cook for 10 minutes.
  5. Add the heavy cream and cook for an additional 5 minutes.
  6. Blend if desired for a smoother texture or serve as is.
  7. Adjust seasoning and serve warm.
