A rich and creamy mushroom soup with turkey bacon and herbs for a delightful meal.

Ingredients

  • 4 cups sliced mushrooms
  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 tablespoon fresh thyme
  • 1 tablespoon parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. Add onions and garlic to the pot; sauté until translucent.
  3. Stir in mushrooms and cook until softened.
  4. Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in heavy cream and herbs, cooking until heated through. Season with salt and pepper.
  6. Serve hot, garnished with crumbled bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Adjust the thickness by adding more cream or broth as needed.
