  • 1 cup chopped onions
  • 2 cups sliced mushrooms
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon thyme

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings.
  2. Add onions and mushrooms to the pot, cooking until soft.
  3. Stir in the butter until melted, then add the flour, whisking to combine.
  4. Gradually add the chicken broth, whisking continuously until smooth.
  5. Bring to a simmer and stir in the cream, salt, pepper, and thyme.
  6. Chop the turkey bacon and add it back to the pot. Simmer for 5 more minutes.
  7. Serve hot, garnished with additional bacon bits if desired.
