  • 1 pound chicken breast, sliced
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until fragrant.
  3. Add sliced chicken and Cajun seasoning to the skillet. Cook until the chicken is browned and cooked through.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and creamy.
  5. Add the cooked pasta and diced bell pepper to the skillet, tossing to combine.
  6. Season with salt and black pepper to taste. Serve garnished with fresh parsley.
