  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
  2. Add onion, carrots, and celery to the pot. Sauté for about 5 minutes until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Pour in chicken broth and bring to a boil. Add the shredded chicken and egg noodles.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in heavy cream, thyme, and chopped turkey bacon. Season with salt and pepper.
  7. Cook for another 5 minutes before serving.

Notes

  • This soup can be made ahead and reheated for a quick meal.
  • For a lighter version, use low-fat milk instead of cream.
