A comforting and delicious creamy chicken noodle soup, made with turkey bacon and fresh herbs.

Ingredients

  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the chicken to the pot and cook until browned.
  3. Add the onion, carrots, celery, and garlic; sauté until the vegetables are tender.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the egg noodles and cook until al dente.
  6. Stir in the heavy cream, thyme, parsley, salt, and pepper.
  7. Serve hot topped with crispy turkey bacon.

Notes

  • For a heartier soup, add more vegetables like peas or corn.
  • This soup can be made ahead and reheated; add a splash of broth if too thick after refrigeration.
