  • 1 package cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute.
  3. Pour in chicken broth and bring to a simmer.
  4. Add the chicken and tortellini, cooking until the tortellini is tender.
  5. Stir in heavy cream, basil, thyme, salt, and pepper.
  6. Allow to cook for an additional 5 minutes, then serve hot.

Notes

  • For added flavor, sprinkle grated Parmesan on top before serving.
  • This soup can be frozen for up to 3 months.
