This creamy garlic roasted potato salad is loaded with the crunch of turkey bacon, making it a delightful side dish perfect for any occasion.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh garlic, minced
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them on a baking sheet.
  3. Toss the potatoes with olive oil, salt, and pepper.
  4. Roast in the preheated oven for 25-30 minutes or until golden brown and tender.
  5. While the potatoes are roasting, cook the turkey bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into pieces.
  6. In a large bowl, mix sour cream, mayonnaise, garlic, chives, lemon juice, and Dijon mustard.
  7. Once the potatoes are roasted and slightly cooled, add them to the creamy mixture along with the chopped turkey bacon.
  8. Toss everything together gently until well combined.
  9. Chill in the refrigerator for at least an hour before serving to enhance the flavors.

Notes

  • For extra flavor, add some shredded cheese into the salad.
  • This salad can be made a day in advance.
