  • 1 pound penne pasta
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 4 slices crispy turkey bacon, crumbled
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, toss the cherry tomatoes with olive oil, salt, and black pepper. Roast in the oven for 20-25 minutes.
  3. Cook the penne pasta according to package instructions; drain and set aside.
  4. In a large bowl, combine the roasted tomatoes, ricotta cheese, and Parmesan cheese. Mix well.
  5. Add the cooked pasta to the mixture and stir until combined.
  6. Serve topped with crumbled turkey bacon and fresh basil.

Notes

  • For a vegetarian version, omit the turkey bacon and add more vegetables.
