  • 2 fillets salmon
  • 4 slices turkey bacon
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  2. In the same skillet, add olive oil and heat over medium-high heat.
  3. Season the salmon fillets with salt and pepper, then place them in the skillet. Cook for about 5 minutes on each side or until cooked through.
  4. Remove the salmon and set aside.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Pour in the heavy cream, add spinach, sun-dried tomatoes, and Italian seasoning. Stir to combine.
  7. Simmer the sauce for 3-5 minutes, allowing it to thicken.
  8. Return the salmon to the skillet and spoon the sauce over the top. Sprinkle with chopped turkey bacon before serving.
