1 pound salmon fillet, cut into bite-sized pieces
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, beaten
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha sauce
1 tablespoon lime juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
Instructions
Preheat the oven to 400°F (200°C).
Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs.
Dip each salmon piece in flour, then in eggs, and finally coat with panko breadcrumbs.
Arrange the coated salmon bites on a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until golden brown and crispy.
While the salmon is baking, prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and salt in a bowl.
Once the salmon bites are cooked, remove them from the oven and toss them in the bang bang sauce.
Serve immediately with extra sauce on the side.
Notes
For extra crunch, you can air fry the salmon bites instead of baking them.
Adjust the spiciness of the bang bang sauce by adding more or less sriracha.
