  • 1 pound salmon fillet, diced
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix salmon pieces with garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into small bite-sized balls.
  4. Dip each ball into the beaten eggs, then roll in panko breadcrumbs.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes until golden and crispy.
  7. While baking, mix mayonnaise, sweet chili sauce, and sriracha in a bowl.
  8. Serve the crispy salmon bites with the sauce for dipping.
