  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • 1 tablespoon vinegar
  • 12 corn tortillas
  • 2 cups chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak the dried chilies in hot water for about 20 minutes until softened.
  2. Remove the stems and seeds from the soaked chilies and blend them with the beef broth until smooth.
  3. In a crock pot, combine the beef, onion, garlic, cumin, oregano, bay leaves, vinegar, and the blended chili mixture.
  4. Cook on low for 8 hours or until the meat is tender.
  5. Shred the beef and serve in warm tortillas with cilantro and lime.
