- 3 pounds beef chuck roast
- 2 cups beef broth
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 bay leaves
- 1 tablespoon vinegar
- 12 corn tortillas
- 2 cups chopped cilantro
- 1 lime, cut into wedges
- Soak the dried chilies in hot water for about 20 minutes until softened.
