  • 1 pound chicken breasts
  • 2 cups chicken broth
  • 1 can green enchilada sauce
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the chicken broth, green enchilada sauce, corn, black beans, diced tomatoes, cumin, garlic powder, and onion powder.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir everything together.
  5. Serve with shredded cheese if desired.
