  • 1 pound boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 1 can (14 ounces) coconut milk
  • 2 cups sliced mushrooms
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons red curry paste
  • 2 teaspoons ginger, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cups fresh spinach
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Place chicken thighs in the bottom of the slow cooker.
  2. Add chicken broth, coconut milk, mushrooms, onions, garlic, red curry paste, ginger, and fish sauce. Stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add lime juice and spinach to the slow cooker.
  5. Serve hot, garnished with cilantro and lime wedges.

Notes

  • For spicier soup, increase the amount of red curry paste.
  • This soup can be served over rice for added heartiness.
