Delicious and comforting crockpot chicken and dumplings that make meal prep effortless.

Ingredients

  • 2 pounds boneless chicken thighs
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables
  • 1 package refrigerated biscuit dough

Instructions

  1. In the crockpot, add chicken thighs, cream of chicken soup, chicken broth, garlic powder, onion powder, parsley, salt, and pepper. Stir to combine.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  3. Shred the chicken in the crockpot using two forks.
  4. Add frozen mixed vegetables and stir.
  5. Drop pieces of biscuit dough on top of the mixture.
  6. Cover and cook on high for an additional 30 minutes or until the biscuits are cooked through.

Notes

  • For added flavor, you can include herbs like thyme or rosemary.
  • Serve with a side salad for a complete meal.
