Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can diced tomatoes with green chilies
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle powder
  • 4 cups chicken broth
  • 1 tablespoon lime juice
  • salt to taste
  • pepper to taste

Instructions

  1. In a slow cooker, combine the chicken breasts, diced tomatoes, corn, black beans, onion, garlic, cumin, chipotle powder, and chicken broth.
  2. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the soup.
  4. Add lime juice and season with salt and pepper to taste.
