1 pound boneless, skinless chicken breasts
1 can diced tomatoes with green chilies
1 can corn, drained
1 can black beans, drained and rinsed
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chipotle powder
4 cups chicken broth
1 tablespoon lime juice
salt to taste
pepper to taste
Instructions
In a slow cooker, combine the chicken breasts, diced tomatoes, corn, black beans, onion, garlic, cumin, chipotle powder, and chicken broth.
Cover and cook on low for 6-8 hours or until the chicken is cooked through.
Remove the chicken, shred it, and return it to the soup.
Add lime juice and season with salt and pepper to taste.
