  • 2 pounds chicken breast
  • 4 medium potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Layer the diced potatoes, carrots, celery, and onion on top of the chicken.
  3. Pour in the chicken broth and add the garlic powder, salt, pepper, and thyme.
  4. Cover and cook on low for 6-8 hours or high for 4-6 hours until the chicken is cooked through.
  5. Remove the chicken, shred it, and return to the crockpot.
  6. Stir in the heavy cream and heat for another 20 minutes before serving.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
  • Adjust seasoning to taste.
