- 2 pounds chicken breast
- 4 medium potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Place chicken breasts at the bottom of the crockpot.
- Layer the diced potatoes, carrots, celery, and onion on top of the chicken.
- Pour in the chicken broth and add the garlic powder, salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours or high for 4-6 hours until the chicken is cooked through.
- Remove the chicken, shred it, and return to the crockpot.
- Stir in the heavy cream and heat for another 20 minutes before serving.
Notes
- For a thicker soup, mash some of the potatoes before adding the cream.
- Adjust seasoning to taste.
